A PB Mystery

Why is it that the smooth, shiny PB on the top of a jar of regular (not the you-need-to-stir-it) PB tastes better than the rest of the PB in the jar? (And who keeps scraping this out of the PB jar before I can eat it? Husband Guy, is this you?!)
